Lately, I've been looking for ways to use goat cheese in some way every day. For luch I usually make myself a salad with artichokes, roasted red peppers, black eyed peas and goat cheese with a simple homemade dressing of olive oil and Balsamic vinegar. It's so delicious!
I also made some gluten free tortillas and spread hummus all over them and topped them with the same ingredients as the salad. It's just the perfect portion for dinner. Yum!
