Preheat oven to 450 degrees. Go outside and pick some thyme, sage and rosemary from your herb garden.
Chop them up and add 1 Tbs of sea salt and 1 tsp of pepper.
Add 3 Tbs of olive oil and mix all the herbs and spices together. You're probably wondering where the garlic is. I ran out of garlic and forgot to buy some on Friday. It's ok. We'll survive without it.
Cut up an onion and a lemon to put inside the cavity of the chicken.
Stuff the chicken with the lemon and garlic.
Pour your herbs all over the chicken and rub it down on all sides. Bake the chicken for an hour until it is golden brown.
