This morning Angela decided to have a picnic in our family room and read some Eric Carle books we got at the library Saturday morning. It was a combination of a tea party and picnic combined. She wanted to use the new Harmony Tea cups I purchased at a Southern Living at Home party a few weeks ago. (Eventually, I'd like to get the matching tea pot.) We had warm milk and potato pancakes for brunch. We read the books and enjoyed some quiet reading time together while the baby slept in the Moby and the boys skateboarded in the basement. Later on Joseph read a few books to the baby. The kids really love reading to her and she seems to enjoy it as well.
While Joseph was reading to the baby, I started looking on-line for some Eric Carle resources and found a few sites with some really fun ideas. One of the sites suggests making a caterpillar out of 5 paper cups and putting apples, pears, plums, strawberries and oranges in each of the cups. The kids can make their own fruit salad with whatever fruits they choose. You could also make a fruit salad, a smoothie for breakfast, or serve the smoothie at tea time in the afternoon.
Here is the recipe for a "Very Hungry Caterpillar Fruit Salad."
- 1 apple
- 2 pears
- 3 plums
- 4 strawberries
- 5 oranges
- bunch of mint sprigs
Peel, pare, seed, hull and section each fruit. Cut into bite-sized pieces. Then put them all together in a big bowl and chill. Garnish each serving with a sprig of mint.
